Andhra style baby onion pickle or Chinna Ullipayalu Pachadi is a popular South Indian condiment made from small onions (also known as shallots or pearl onions) that are pickled in a mixture of spices, vinegar, and oil. The pickle has a tangy, spicy, and slightly sweet flavor that goes well with rice, roti, or any South Indian meal. To make the pickle, the baby onions are peeled and then fried in oil until they turn golden brown. Then, a mixture of ground spices such as mustard seeds, fenugreek seeds, red chili powder, and turmeric powder is added to the onions, along with some Lemon Juice and salt. The mixture is cooked for a few minutes until the flavors blend well.
